I should apologise to @songsforsaturday here who is the only sauce winner who doesn’t have a bottle on the way today. I tried to ferment some chillis but it didn’t ever get going so I ended up with a bunch of Thai chillis in brine instead. Which is nice (and made the base for one of the sauces I made for the other DiSers) but not what I was aiming for. So I’ve amended my recipe and giving it another go. Ihould be ready on the 25th/26th.
