Making a pasta bake as requested by the kids. Forgot to update my ocado for tomorrow so going to have to go to the shop AND made the terrible error of booking it for 7-8 do that we’d have to get up early and be productive. URGH HATE PRODUCTIVITY

Can of chickpeas in a frying pan for 30 seconds with a stock cube, large amount of garlic and couple of tablespoons of tomato purée. Then add 150ml of boiling water and 1-2 tablespoons honey (depending on how sweet you like it), 2 teaspoons of harissa paste. I always add in a glug of passata too if I have any lying around. Add in some black pepper and let in reduce down. Cut up a couple of sausages and fry off in a separate pan before adding in - when all cooked crack a couple of eggs into the pan and cover with tinfoil until the eggs cook (~5-7 min). Then serve with dill and parsley and a bit of natural yoghurt.

I have to be honest as good as it was I probably prefer the version that uses haddock/tilapia instead of the sausages and eggs but it was good nonetheless. Would be tempted to use some kind of beans instead of chickpeas next time.
