I enjoy chilli more than is strictly healthy and I’d put on gloves before touching one of the damn things.

Hope they go down alright! I’m not entirely sure about them myself - both have a nice tang but I used frozen cherries and they’re just not as nice as fresh. Need to get a handle on this whole seasonal fruit business…

Finally got around to giving Version A a whirl with some cheeses and leftover sausages. Very very bloody good work Horse, it’s right up my street. Tangy, tasty, a little kick of heat, fruity but not overbearingly so. Loving it!

So I’ve been experimenting with sauces to use as Sauces of the Month and this week I made Chamoy. A lot of Chamoy. Some would say too much damn Chamoy. So I’m giving some away if anyone is interested.

It’s 3 mangos pickled for 5 days in 7% brine, sugar and habaneros then blended with lime, garlic and some orange habeneros. I think it’s rather good for a first attempt at Chamoy. I normally strain and thicken my sauces but this one demands the pulp I think so it’s a bit thinner and needs a good shake before use. I’ve only tried it with some nachos but it’s really moreish.

I cba doing a raffle for this one - I got five 100ml bottles going spare, first come served. No charge - as usual I’d appreciate the bottle back but most of all what I want is honest feedback.

Update on the business: nearly there. Me and my graphics guy need to set some deadlines and I still need to give my finalised recipes one last whirl to make sure I really have a product worth selling and then I’m gonna start cooking. It’s taken much longer than I expected but then I have no clue how to start or run a business and I’m making sure it’s all sustainable and not just one fun summer cooking sauces. Stay tuned!

Also to all the folks I’ve sent sauces to who haven’t given me any feedback - GIVE ME YOUR THOUGHTS! I’m not fussed if you haven’t gotten round to sending me the bottles back, or if you used them for something else, or even just threw them away. It’s all good. But I’d very much like to know whether my sauces need work or not. Let me know!

I’ve not started sending stuff out to shops and pros yet, once I’ve got my definite finished core sauces done I’ll be doing that. This dude sounds like exactly the kind of guy I need to get the thumbs up from - thank you!

Yeah it’s in quite a central location. I usually go and buy a sauce in there every time I go to Leeds so I can sample everything he has out to try (about 20 sauces).

Try the chilli garlic if you go (though he’ll try to sell it to you anyway)

I genuinely appreciate the input man, no need to couch it in any way. These I’m giving away right here are experiments though. I’m gonna be putting the sauces I’ve spent some time developing out together soon and then sending them out to folks like him who are also trying to make things work as a business. I can guarantee anyone who has their finances on the line will be brutally honest, which I need, but I’m very wary of making a poor first impression.
