So, you need (for two):

  • six sausages
  • tin of chopped tomatoes
  • half a bottle of red wine (any will do)
  • three cloves (ground)
  • 1/2 tsp chilli flakes (or similar)
  • two cloves of garlic (crushed)
  • one onion (roughly chopped)
  • two carrots (chopped into small pieces)
  • one celery stick (chopped into small pieces)

METHOD

  • fry the onions and garlic in a large saucepan; add the carrots, chilli flakes, cloves and celery
  • meanwhile, fry or grill the sausages til browned
  • add the sausages to the saucepan; add the chopped tomatoes and red wine
  • simmer, uncovered, for 1-1 1/2 hours, til everything is nicely reduced
  • serve with mash (I like a bit of grated parmesan and nutmeg in my mash but as you like it)

Have a tub of carrot+ginger+chili soup in the fridge so will be adding some veg and lentils and stuff to that. Should’ve had some garlic bread to go with it but no such luck
