Food thread: ingredients that should never go in particular dishes

Yeah it was nice. The hotel had the best egg man I have encountered on my travels.

Was it an omelette station kind of thing?

Yeah but a well versed egg man’s repertoire is far more more diverse than mere omelettes (@saps plain omelette reference here).

I mix up the yolks and the parmesan into a paste. Dump it in the pasta once its cook and then a spash of the water, mix it up and then leave it for a few mins covered up

I think the recipe I have has four egg yolks plus two whole eggs. Seems to be rich enough that way.

I have cheese on my weetabix and in my fruit smoothie.

I’m chock full of cheese.

the secret to a non-dry carbonara is to hive off some of the starchy pasta cooking water - and then add that to the sauce/ pasta mix at the end to get the desired consistency

I use dry vermouth instead of wine generally (just because it’s easier to have that in and not drink it) - and grate some nutmeg in too
