only came here because I misread the thread as Flying Aubergine :frowning:

meowington’s on the money with the salt. You need to salt them. Deep frying is also better than shallow frying.

Also try roasting them rather than frying them. Cut them how you want, drench them in oil (garlic infused olive oil is perfect for this) then roast for 45 minutes or so and, boom, perfectly crispy aubergines.

Used to have so much trouble cooking aubergine until I made an aubergine and pea curry from Fresh India that you kinda steam the aubergine in and it gets that incredible gooey texture you want. Any pan with a lid should be enough.

This is the recipe, but I now cook all my aubs this way now

I tried to cook that for the first time. Horrible slimy texture. What’s the best thing to do with that shit?

Think Okra is best left to the pros tbh. Only order it if i’m in a legit lebanese place or something.

Yeah we gave up cooking it because like you say, it just seems to come out terribly.
