Wouldn’t his diet be strictly controlled by the team in the training period for as well as in the actual race? Unless he was snaffling extra bags of haribo.
So either the dieticians got something wrong or you know he just got a bit ill. Can’t see how he can be blamed personally either way.

Could be all sorts of reasons. They’ve spent a lot of time riding in rain, so there could be stuff spraying off the road, gets on the top of bottles, riders spitting and spraying snot everywhere. Plus the immune system degrades in GT riders over the course of the race, so not something that could be blamed on diet specifically.
