how come a stiry fry is healthy but chippy isn't

when they are both fried?

Can any scientists here help me out?

Because a stir fry uses maybe 2tbsp oil at most, whereas fish and chips are fried in an entire vat of oil, much of which sticks to the food.

But you can enjoy a chippy tea as part of a healthy diet

I saw a similar poster once arguing that fish & chips is healthier than ultra-processed food because it only has 3 ingredients: fish, potatoes, and batter.

I’m just not sure where you’d find a “batter” growing in nature
