Very confused that multiple people have mentioned spinach.

For me it adds nothing in terms of texture or flavour, so i’m assuming it’s a tactical inclusion and there (boiled) simply to stem the flow of bean juice.

Spinach in a fry-up is great, provides a little contrast from the stodge. Can never be arsed to do it at home, but sometimes you see it as part of a caff’s veggie breakfast and that’s something that tempts me tbqh (like sometimes hash browns are veggie-only)
