I said 6/10 cause where I don’t eat dairy, it’s a bit hard to get excited about dairy free lasagna.
But that said, I make my own vegan one at home all the time. I get wholewheat lasagna sheets from sainos, layer it up with roasted veg (one layer of aub) one layer of corguette, mushrooms etc) and my homemade tomato sauce.
On top I put the tom sauce and then loads of breadcrumbs. Yum
On the side I just like rocket salad with lots of balsamic.
