They’ll add it after the pizza is cooked (obviously) but I can’t think of any place that gives you a huge pile on top, usually it’s just a smattering of rocket leaves

Seems the right approach. Frankly you get too much rucola on a rucola pizza in Italy.

- Whatever base it is you get for those artisan pizzas where it is thin in the middle but the crust is puffed up and blackened and airy and chewy.
- A rich tomato sugo heavy on the garlic and medium on the oregano.
- Olives
- Capers
- Fennel sausage
Chicago-style deep dish base
