For me, these are the essentials:
Celeriac, carrot, leek, beet (not red)
Other things I tend to add: Turnip (as of one week ago), broccoli or romanesco, halloumi (yes really), any other yummy root veg you fancy
Parsnip, horseradish, etc. Flavour wise I’m a big fan of thyme!
Would never have thought of halloumi but I can see that working!
So, just bung all that stuff in with… veg stock? and cook until it is soft?
