Yep. If you’re using meat, it’s an idea to brown it off before stewing it. And I’d probably cook the veg for a bit to soften off before stewing. Can’t beat a nice hearty stew.
Could add a tin of toms and some tin purée to the stock

Yeah I make homemade stock but anything works! Just keep in mind that different vegetables need different amounts of time to be nice and soft (also depending on the size of the chunks ofc). Like, I’ll put the potatos in first (another essential I forgot to mention) and the celeriac and beets towards the end.
