I’ve often wondered whether you could put the cardamom/cloves in a muslin bag while the curry cooks, but I can’t get past how badly stained the bags would surely be - especially if the dish uses turmeric - by the time you pulled it out. Quite apart from whether it’d work with the recipe.

You might be able to put them in one of those loose-leaf tea strainer things.

You can get mesh things for this purpose, or use one of those ball shaped tea strainers. Not sure how well it would work in something with a thick sauce but good for soup and stuff.

don’t see the problem with cardamom pods/cloves in food. if you’ve bitten on one, just spit it out.

That’s the kind of thing I’m thinking of, tbh. Although I could imagine the strainer would get heavily stained very quickly. My wooden spoons need serious cleaning after I’ve made a vindaloo.

I’d worry they weren’t getting enough contact with the oil at the start.
