Ooh I hadn’t thought of pairing them with sweet potato. Excellent call.

Shedloads of butter and cheddar, home-made coleslaw and salad with a good HM french dressing.
Tuna mayo
Baked beans and cheese
Boursin

Once I did a ‘baked potato’ bar for a GoT watching evening with a couple of friends and as well as the above toppings I also sauteed up some slices of chorizo with red peppers and onions. It was greasy deliciousness.

Baked beans and kimchi

I like making stuffed potato skins.
Bake those taters with oil and S+P then scoop out the middles and mix with butter, sour cream, herbs, cheese, whatever else you fancy, if I am feeling extra maybe I’d fry up some onions and or bacon and add those too.
Then top with more grated cheese.
Grill.
Eat.

It’s all about the crispy, slightly chewy skin.
A good source of fibre!

Microwave then oven, surely everyone has this worked out by now.

Yeah not good for an after work evening meal admittedly. But if you’re WFH or you’re having a quiet Saturday or whatever - just stick 'em in and the 2 hours will fly by.

worked out how to not ruin food by putting it in the microwave at any stage, yes

Love a jacket potato. I rub them with olive oil and garlic salt, wrap 'em in foil and put them in the slow cooker for 3-4 hours then the oven for half an hour. Tuna mayo and cheese for me, the Brian Harvey Special, if you will. Or cheese, sour cream and bacon.

You wouldn’t be able to tell the difference in a blind taste test, fact.
