Ricotta

Bunged some of this in my weekly shop didn’t I, but no idea what to do with it. Weirdly I don’t think I’ve ever cooked with it before.

What do?

Bin it. Seriously awful stuff.

oh yeah? like creamed spinach?

I dunno, I just know that I used to buy a frozen spinach and ricotta pizza years ago, and now in my head it’s like “spinach and ricotta”, they’re a double act.

Stick it in a food processor with some other stuff and it can be a very nice base of a bechamel sauce in a lasagne.

Gonna have a doubly creamy eve tonight and make cauliflower cheese in one dish and creamed spinach in another dish and have em both

Ricotta can be great. Add a few small dollops to the top of a pizza, stirred into pretty much any pasta sauce to make it a bit richer but also keeps it fresh tasting.

can work instead of mascarpone in a cheesecake too
