Thai red curry with slow roasted lamb shoulder and aubergine.

Made entirely from scratch, paste n all. Made the paste a while back and froze it. then on Monday I slow roasted a lamb shoulder and kept half the meat and the stock back for this bad boy. gonna eat it in a bit x

Tucked into the Rafi’s spice box dad got me for my birthday, chicken dopiaza, tangy greens, spring onion and mint chutney and parathas.

I am now stuffed (so much so I forgot the picture)
