Top notch sandwich shop cutlery knowledge there Theo. Great work. There’s cutlery here too but on a different floor and I’m a bit scared of the people up there as no-one really knows who I am (I’m out of the office most of the time) and there’s only three of them in a massive empty room with a code on the door so. god this post makes me ashamed.

good points thanks. sounds like my theory about the heat of the sauce holds up. so do you have the sauce in the dish cooking in the oven before putting the eggs in? i do it in a pan and then put it in a cold dish with the eggs which then goes in the oven. i guess I’m doubling my folly with that.

Probly not much. I’m not even sure I’m making shakshuka. Just thick spicy tomato sauce with baked eggs in it. What’s ranch eggs?
