I was right about aubergines, they are rubbish.

We made a moussaka yesterday which weโ€™re intending to have again for dinner today but Iโ€™m not excited about it as was pretty disappointed with it, thanks to the aubergine salting process it was too salty, overwhelmed all the other flavours :confused:
Donโ€™t really get the point of the aubergines at all. Everyone goes on about how they have to be cooked properly so we made an effort to get that right but they were just slimy and a bit tasteless. Meh.

Beans and eggs on toast and a Smoothie for breakfast.
Will probably have some Dcdb for breakfast pudding, too.

Delicious Moroccan leftovers for lunch.

Thought we were getting takeaway Sunday dinner, but Iโ€™ve been shot down. Abject misery instead (baked potatoes, fillings TBC).

Was up this morning at 6.40 to make a beef casserole to chuck in the slow cooker. Forgot to buy fresh thyme the other day didnโ€™t I, so had to make do with a sprinkling of mixed herbs instead.

Was up at 9 frying onions and garlic and browning this off to go in the slow cooker.

Yeah, I spoke to my bestie about it after and she said that the salting process is no longer necessary, itโ€™s a hangover from when they used to have to be salted to get the bitterness out but they bred it out of the modern aubergineโ€ฆ
@avery was adamantly insistent we salt then for 30 minutes tho.

Weโ€™re having this for tea. It is always very good.

Iโ€™ll probably have chicken and pesto sandwiches for lunch.

Probably have leftovers from last nights Middle Eastern spread featuring baba ganoush, flatbreads, tabouli, humus and falafel. Full credit to my gf for this.

Aubergines are great, you just need to fill them with delicous oil and get them coated in delicous spices
