Made myself an amazing tomato pasta Sauce the other night.
So gonna make masel a bow bowl of pasta and I’m gonna absolutely smother in at least two different types of cheese.
Then I’m gonna fall into a food coma. :+1:

LMac sausages, roast potatoes and carrots, cabbage, broccoli and probably leeks or something on those lines

So far I’ve had a hot dog, a burger, 2 slices of chocolate cake and a Krispy Kreme banoffee donut. Feel better for it too. Oooh I also had a few mexican nuts and a some pringles and Cheddars, each of which i poured hot sauce onto, as a form of sinus clearing medication.

Is it too early to crack out the saute pots? I’m hungry and also had a horrific moment earlier where I went to the corner shop and bought a pack of dairy lea dunkers and the dip had gone off :sob::sob::sob: it was DISGUSTEN

Never too early for sautéed potatoes.
They are an excellent breakfast tbh.

It’s a fairly straight forward sauce. Finely slice up a shallot and cook it in oil, add in approx 5 cloves (i always use lots of garlic cos it’s fucking amazing) of finely sliced garlic, throw in a finely chopped red chilli.
Once all that is starting to colour throw in a tin of peeled plum tomatoes, fill the tin half full of water and put that in along with a handful of basil. Salt and pepper, pinch of oregano, pinch of thyme, some chilli flakes, splash of balsamic vinegar. Oh and a squeeze of tomato puree.
Let that bubble away and reduce.

However tonight i am gonna double dunt the tomatoes. Gonna roast off some cherry tomatoes and baby plum tomatoes in garlic, oil, basil and a splash of balsamic vinegar. Roast for about 15/20 mins at about 180, the tomatoes and garlic get all sticky and amazing.

Throw that in with the other sauce and we have a fucking spot on pasta sauce.:+1:
