I use pasta flour (about 150g) and hot water (about 120ml) and knead the dough for about ten minutes. Leave it for about 30 mins covered with wet tea towel so it doesnt dry out. Cut into about 8 pieces. Roll them into balls then roll out with a pin into circles. Add filling, fold over and seal with a fork or twist with fingers. Steam in a bamboo steamer for 15 mins or until ready (will depend on how efficient your steamer is, mine has gaps).
The filling can be made in advance. I diced two sweet potatoes, fried in semese oil, ginger and five spice then added chopped mushrooms, rice vinegar, soy sauce and a few tablespoons of water. Put lid on and leave to cook on a low heat for about 30 mins. Add chopped spring onions.
Goes well with most dips etc.
