You know I think we need a couple of food specialists on dis. There was one years ago who knew all kinds of things about the best restaurants and food and that. Had an i and a z in their username.

Nick Nairn said it gets overcooked because it cooks quicker than the rest. Just cook it separately then. Always thought scallops looked wrong when they were served without it tbh which is whenever I’ve had them in a restaurant.

Shellfish. Expensive shellfish. Taste great cooked in butter with a little lemon or mustard, but not quite great enough to be worth the price, so probably have them twice a year or so.
