I had Vietnamese curry (mushrooms, lemongrass, leek, quorn, coconut milk, ginger, garlic) with rice cooked in stock and lemongrass and it was amazing. It took 20 minutes to make too. Perfect combo of taste and little effort. Would be better with some greens next time, might bung some broccoli into the leftover portions.
Going to watch an episode of ozark or the ozarks, whatever it’s called, then read more of my trashy novel (which is scaring me a bit).
