A decent roll is essential, same as for a good burger. Good ingredients and all that.

Agree about the ‘putting too much stuff on top’ - there’s a Bubbledogs one with macaroni cheese, and another with fried eggs, which are just asking for trouble (or a fried egg in your lap).

Place where I’m staying in New York has a Taiwanese place next door selling some funky looking steamed buns, could see that being appropriated

We have one on our street at work and I always describe it as subway but with pizza and everyone is always like that sounds shit. but it’s WELL GOOD.
