I have three sets of scissors in my kitchen.

Ordinary scissors for general packaging cutting.
Poultry shears for dismembering chickens and cutting the rind off bacon.
Herb scissors, ostensibly for cutting herbs, but I’m not a clumsy moron so I use a knife instead.

I’d done without kitchen scissors for a looooooooong time, had been using an old cheese knife to open things with often poor results (for example, pouring out porridge). I got a pair (of scissors) and I now use them for everything I can.
