I like the idea of secondary fermentation in the bottle.

Basically use Tabasco as seasoning, chuck it on pretty much everything, so for that reason I gave it a vote.

Love Franks but it’s very specific, quite overpowering for lots of stuff.

Encona is good but strong, use it occasionally.

Cholula is fine and I keep a bottle knocking about but don’t really get the love.

Sriracha is another workhorse, got to give it respect.

absolutely love chicken wings, coated with a concoction of franks sauce and a load of melted butter and extra vinegar. could eat buckets of them.

Yeah basically

Sriracha is fine as one of many flavours in a dish, but in itself doesn’t taste very good.

Encona is easily the tastiest, if you want a spicy tomato sauce a bit of encona just adds an unbelievable amount of flavour imo.

Not really interested in the other ones, or in the hot sauces that just blow your head off.

Franks is good then. I’m not a hot sauce person cause I’m sensitive but it’s a perfect spicy for me and it’s nice and tangy. It could do with being more smoky but maybe there’s one with added smoke you can buy?

Encona for sure. Nice range too, their extra hot one has a nice tomatoeyness to it, there is a sweet chilli and a peri-peri. Their website shows a papaya one which sounds interesting.

I do like a sriracha (or equivalent style) on eggs and with ramen though.

this is decent. there’s another brand I got from them but I can’t remember the name

Chipotle cholula is a lovely smokey sauce if you can find it

Unfortunately it has become pretty rare.

Yeah, Waitrose often have it but they are on the wrong side of town. There is a specialist shop in town that does it but £££. Might see if I can order a wholesale box of it :yum:
