Smoked paprika gets used a lot. Adds smokiness and depth, I just banged some in a bolognese. Works nicely with roast potatoes too. I have this very generic “lamb seasoning” too
which is (I quote) Salt, Onion Powder, Garlic Powder, Dried Cut Rosemary, Ground Rosemary, Ground Coriander, Ground Black Pepper, Rubbed Mint, Ground Oregano, Rubbed Parsley so is a nice mix of stuff to add to basically anything like a roast chicken or veggies.
I mean… has to be an oil, surely? Olive for me.
