Your best weeknight dinner

Honey soy chicken with pak choi for me. 1:1 honey:soy sauce mix over chicken thighs, cook in lidded pan for 35 minutes. Stir fry some pak choi, with garlic if you can be arsed. Rice.

The effort to tastiness ratio is untouchable.

Mrs CCB tends to cook Monday-Thursday. Favourites:

  • macaroni cheese with bacon
  • chow mein (either veg or pork)
  • Bosh! spaghetti puttanesca
  • enchiladas

Also roast pie (the leftover contents of a roast, in a pie) but that’s kind-of cheating to include that.

probably Thursday

Oh man, this is really hard to decide! I’d say the one I get hype for most is probably my sweet and sour pork:

  • Diced pork chops
  • Red pepper, red onion, pineapple
  • Garlic, ginger, coriander, fivespice
  • Vinegar, pineapple juice, soy sauce
  • Fluffy rice
  • Sesame seeds

Dammit now I’m hungry

Vegan mac and cheese.

Chuck a load of cashews in stock with a chop onion and couple of cloves of garlic and boil for five minutes
Put the mac on to boil
Chuck the stock, onion, garlic and cashews in a blender with half a teaspoon of turmeric, half a teaspoon of mustard powder, salt, pepper, loads of nutritional yeast and the juice of a lemon and blend until smooth.
Drain the mac and chuck it in a dish with the sauce
Breadcrumbs on top
Bake for five minutes

Total time about 20 minutes. Banging.
