Low and The Necks are the two that come to mind.
Even my favourite artists with large back catalogues (Yo La Tengo, Dylan/Van/Young, Bowie, Cowboy Junkies) I would tend to reach for 5 or 6 albums most of the time.

The 10 R.E.M.s are Murmur - New Adventures In Hi Fi, and the 10 Sufjans are Michigan, Seven Swans, Illinois, Age Of Adz, Carrie & Lowell, Greatest Gift, Planetarium, The Ascension, A Beginner’s Mind, Javelin btw (and his silly little instrumental projects and Christmas albums and A Sun Came get revisited every now and then) btw.
Could probably come up with 10 Springsteen albums worth listening to

I’d say Bruce and Bob too. If we count solo Westerberg then him and the Replacements

Out of the last 20 years got to be Bright Eyes. If you add in all the little side projects Conor did it’s a ridiculous tome. Mountain Goats too.
Fucked Up are at 9 but with their live albums and buttload of EPs they’re honorary as it comes.
Conor would work between bright eyes, solo, desa & BOCC
For ones I actively return to, still has to be at least 20-25 from the main studio albums, plus Suitcases, side projects, Bob solo, Toby solo … might be approaching 50 total there
Even just Bright Eyes you could leave off the last 2 records and have a great run from the early collection to down in the weeds.
