I have in the past but changed to adding the cheese in instalments to try and get the texture I wanted. I also chuck in the lardons (I never use guanciale because it takes an eternity to render) when I add the eggs to give the whole thing a bacony flavour, whereas Alvaro drops them onto the pasta at the very end.

As with all Italian cuisine there are a million regional variations and the only thing they all have in common is that each region thinks the rest are palateless perverts for doing it differently.
