Anybody have any recommendations for a pay monthly (or whatever) non-contract sim to use in France (doesn’t matter about elsewhere) which has unlimited data?

It’s just a lot easier and usually better value. If it’s a new iPhone it will almost certainly be esim accessible.

Pretty sure smarty works in France and their unlimited is 20 quid a month and can just be bought for one month
12gb limit abroad regardless of plan, annoyingly (as currently on Smarty).

Yeah, I’m not either; youngest is working there for a while, but not long enough to take out a regular broadband contract for his flat so his phone plan needs to cover all data he uses (other than at work).

Can you not buy the equivalent whilst over there so the roaming would be back at home rather than whilst away? Actually maybe that’s the question you are asking
